Avoid Automatic Updates from Apple ? [Q]

Hi I very much want to jailbreak and unlock my iPhone 4, (can’t stand AT&T) but have some concerns.
Q1. Can I avoid receiving automatic updates to my phone from apple or whomever, to avoid problems with the jailbreak? Nothing sucks worse than having to deal with regular updates that screw up unapproved apps and the general functioning of the phone. That would be a deal-breaker as far as jailbreaking the phone.
Q2. I want to unlock the phone as well, but don’t quite understand the micro-sim vs sim replacement that I am supposed to do. Is there a concise, proven step-by step guide?
