Restoring Iphone 3G to Factory Settings [Q]

I have two phones, both jailbroken, a iPhone 4 and a 3G. Both have shsh blobs on Cydia. I would like to restore my 3G to factory so I can sell it. My iTunes is pointed to Saurik’s server. So, if I restore the 3G using iTunes, will the “latest iOS” be v4.0.1, which is what is running on my 4, or
would it go to v4.1? I don’t want 4.1, as it will break the JB on my iPhone 4. It seems to me this would work.
